I love to bake! I have been baking since I was a young girl.  In my house, every child (except one who was never interested) learned how to bake at a young age.  We had lots of active kids and big appetites, and all with a sweet tooth. With nine people at the dinner table we went through a double batch of cookies and a pan of brownies or a cake almost every week. There was always a child who was old enough and had time on his or her hands to make dessert when we ran out. Funny that nobody ever complained about this duty! I always found it an enjoyable and peaceful experience. 
Later, at college, and after I entered the workforce, I found myself returning to the kitchen to bake something when I was stressed. So when my first career was no longer fun a friend suggested I open a bakery.  My jaw dropped at the comment, but over time the idea took hold. 
I decided to pursue an associates degree in Pastry Arts from Collin College. Collin College has a wonderful program, so if anyone you know is considering a culinary or pastry career, point them to Collin College. They provide a great education and tons of hands-on practice at a fraction of the cost of other culinary schools. They are also an American Culinary Federation accredited program! 
Fall Creek Bakery is a home bakery. In 2011 the Texas legislature passed the Cottage Food Law allowing people to operate a bakery out of their home, providing a limited list of products including baked goods that don’t include any time or temperature sensitive components (those that need to be kept refrigerated or heated). On June 14, 2013, and again in 2019, the law was updated to allow home bakers to sell a slightly expanded list of foods as well as sell their products at farmers markets, farmer stands, and other small venues.
